The project of heating and cooling chambers for sausage aging in the meat industry
Aging chambers are chambers in which fermentation of products takes place with very demanding technological parameters of temperature and relative air humidity.
Considering that the products during the fermentation process also undergo an intensive drying phase, the chambers are, in principle, refrigerator-type dryers.
Before the reconstruction, each chamber was equipped with an ammonia cooler and a steam heater.
Direct ammonia cooling and steam heating has been replaced by hot and cold water, which are prepared in a central system using heat pumps.
As a backup for the heat pump system, an ammonia cooler and a steam heater were created that work as a partial or 100% backup for the heat pump system.
Surplus energy obtained from heat pumps is used for heating sanitary hot water.
The project was done according to the “turnkey” principle, from the idea, the creation of technical documentation, the execution of mechanical and electrical works to the development of the software algorithm and commissioning.
